INGREDIENTS
2 cups granulated sugar 1 cups vegetable oil 1/2 cup whole milk 3 large eggs, at room temperature 1 tablespoon pure vanilla extract 9 oz all purpose flour 1 teaspoon cinnamon 1 teaspoon nutmeg 2 teaspoons baking soda 1 cup chopped walnuts 1 cup carrots, grated 1 can crushed pineapple
CREAM CHEESE ICING
3/4 pound cream cheese 1/2 pound unsalted butter 1 teaspoon pure vanilla extract 1 pound confectioners' sugar
-Make sure ingredients are at room temperature -Mix Cream cheese and butter with an electric mixer for 5 minutes or until light and fluffy -Add sugar and continue mixing on medium speed until well combined -Add vanilla extract and mix on high until icing becomes light and fluffy -Enjoy!
